Cinnamon Sugar Roasted Pumpkin Seeds

I don't know about all of you, but I LOVE pumpkin seeds. There has been a bit of experimenting over the years with different flavors and today I made cinnamon sugar roasted seeds. YUUUMM.

Nothing like taking something healthy and turning it unhealthy. Am I right?!

These are super easy and super delicious! Enjoy!


What you will need:
A pumpkin. We got ours at Mckee Ranch last weekend, such a cool little place.
3 tsp. of cinnamon
1/4 cup of sugar - or whatever type of sweetener you would like to use.
1 tbsp. of olive oil.


Steps: 
-Cut top off of pumpkin and start that really fun process of scooping out all the pumpkin guts and -seeds.
** I tried to get Brynlee to play with the insides of the pumpkin and she was not having it. So weird! I thought kids liked that sort of stuff. I mean... I like that sort of stuff haha.

-Remove large pieces of the pumpkin from the seeds and place seeds in a bowl.
-Fill bowl with warm water and let the seeds float to the top.


-Scoop out the seeds that you can. 
-Place on a couple paper towels and allow them to dry.
** You can either do this over night or if you were up early like I was you can do this first thing and let them sit for 5-6 hours! 


-After they have dried put them back in a bowl and add your tbsp. of olive oil and make sure they are fully coated.
-Add cinnamon and sugar and mix.


-Lay them out on a cookie sheet and put in oven at 310F for 30 minutes.
** I've notice they always come out better if you stir them at the 15 minute mark.


-Let them cool and enjoy :)
